100% Garnacha. Certified organic. In 1998, Rosalie Molina and her husband Manolo Garrote had a vision to revitalize winemaking in their home region of La Mancha. They envisioned a return to the basics of organic grape growing and natural wine making. This Grenache highlights the fullbodied yet elegant style of the estate. Dark fruits of plum and blackberry intermingle with hints of earth and sweet spices from aging in French oak. Bottled without fining, filtration, or sulfur.

100% Sangiovese. Certified organic. A fresh and young version of Sangiovese from the mountainous Montefalco region of northern Umbria. Dark fruit and an earthy richness ensure this wine can stand up to any meat, but without being too weighted down with tannins and oak.

Favorita, Moscato, Arneis, and Chardonnay. A delightful gem from Piedmont! Light and fresh with tiny bubbles. The fermented Favorita, Arneis, and Chardonnay are blended with unfermented Moscato, and the sugar in the Moscato must sets off the second fermentation. Perfect apertif or picnic wine!

100% Gamay. Beau! Beaujolais comes from a forty year-old high-density vineyard. Fermentation is traditional, with 100% whole-clusters. The whole bunches are kept with the juice for six to eight days and then feremented and aged in a mix of stainless steel and cement vats until bottling in the spring. A bright and juicy gamay.

Aríz, Pedro Ximénez, and Palomino Fino. Pálido translates to “pale” and is the name for the Fino-style wine, which is fermented with native yeasts in vat, transferred to old amphora and then to a solera where the wine spends an average of 5 years of aging under flor. It is bottled en rama, meaning without harsh filtration or stabilization. This is a fresh, yeasty, salty, wine. Not technically a sherry, as it's produced north of Jerez in the Sierra Morena mountains of Andalucia.

100% Palomino Fino. The wine is fermented naturally in very old oak barrels. They remain in this "sobretabla" for 1 year fermenting to about 12% alcohol and forming the flor. The wine is then removed from the lees and fortified to 15% and introduced to the first "criadera" or level of the Inocente solera. The wine undergoes biological aging under the veil of flor for over 10 years. There are 10 criaderas + the Solera whereas most Finos on the market only have 3 years aging.

100% Palomino Fino. The grapes for this Manzanilla come from Pago Miraflores in Sanlucar de Barrameda very close to the Atlantic. The wine undergoes biological aging under veil of flor for over 5 years in Sanlucar de Barrameda. There are 6 criaderas + the Solera. The solera is the most famous Manzanilla solera called Misericordia with a very long and rich history.

100% Pinot Grigio. This sustainably farmed cooperative, founded in 2001, has 224 growers each owning an average of 1.6 hectares. Stefano Filippi is the third generation of his family to be headwinemaker and his daughter is poised to follow after him.

Garganega, Cortese, Trebbiano. The Custoza DOC is a still white wine grown on the southeastern corner of Lake Garda in the Veneto. With a pale straw yellow color, fragrant with floral notes and some white tropical fruit on the palate.

The Aperitivo Cappelletti, endearingly known to locals as just Specialino, may be the oldest style of the classic red bitter still in production. Unlike its larger commercial rivals, Cappelletti is less sweet and has a wonderful drying finish. Additionally, it still uses natural carmine color for a crimson red and retains a vinous texture from its wine base. It offers a vibrant and flavorful profile, complemented by bitter undertones on a traditional wine base. This yields a Negroni or Spritz that is dry and refreshing in the finish. It is made just outside of Trento in Alto Adige by the Cappelletti family, who also produce a number of other exceptional aperitivi and amari.

Many of her vineyard sources are organically grown, dry farmed and many decades old. Wine is blended in January and aged in foudre and 1-2 years old barrels from Bordeaux grand cru for one year before bottling. Dark, concentrated richness.

Tempranillo, Viura, Malvasia. From 10 different micro plots within 10ha of certified organic estate vineyards in the town of Lanciego (Rioja Alavesa). Field blend of red and white grapes on calcareous clay soils with high iron content. Hand harvested, carbonic maceration in open concrete tanks begins (which is not a fad here it's actually native to this region) and the wine ferments in the tank with spontaneous yeast for 7-9 days before pressing. Aging continues in concrete tanks for a minimum of 3 months before being bottled slightly clarified (with pea powder!), unfiltered, with only low SO2 at bottling.

This frizzante is made with the Glera grape—same as Prosecco—but second fermentation occurs naturally in the bottle, rather than in tanks, a method which Prosecco is famous for. Montepulciano/Sangiovese. Certified organic. Classic, dark, somewhat brooding, blend of the 2 most important red grapes in Le Marche. Excellent food wine. This family-run estate is situated in Castel di Lama in the Ascoli Piceno region, in southernmost Marche, with vineyard holdings (45 ha) straddling the Abruzzo line. The main vineyard, in Offida, is hilly (280m-350m), with eastern exposure and a loose clay soil. First planted in the 1950s, the winery is managed today by proprietor/winemaker Quinto Fausti and his son Alighiero.

The sweet, pale ‘Blanc’ variety of vermouth was first created and made famous by Dolin in Chambéry long before Italian producers replicated the style as ‘Bianco’.
